Using zoodles, or zucchini noodles, is one of my favorite ways to add a fun and healthy summer side dish into my grain-free life. Add some juicy chicken and crunchy steamed broccoli and you have a fast and nourishing meal!

Baked Chicken with Zoodles and Broccoli

What you need:

  • Dairy-free ranch dressing
  • 4-6 chicken breasts (this is plenty for leftovers)*
  • Olive oil
  • Organic Aloha Chicken & Pork Seasoning & Rub from the Aloha Spice Company
  • 1-2 zucchini, turned into zoodles**
  • 2-3 heads of organic broccoli, cut for steaming

There are 2 options for your dairy-free ranch dressing: buy it or make it. This can obviously be prepared or purchased ahead of time.

Primal Kitchen makes a very good line of salad dressings, including a ranch dressing made with avocado oil.

The second option is to make it your self! I love the recipe from Amanda Love’s Summer Seasonal Menu Plan:

Ranch Dressing

  • 1 cup mayonnaise (homemade preferred, but if not I recommend Sir Kinsington Avocado Oil Mayonnaise or the mayo from Primal Kitchen)
  • ¼ cup full-fat coconut milk
  • 2 TBS fresh lemon juice
  • 3 TBS minced fresh herb (dill, chives, parsley – I do keep dried on hand and it works great, too)
  • 1 clove garlic minced
  • ¼ tsp sea salt
  • Pepper, to taste

Combine all ingredients in a small bowl until smooth.

To prepare chicken, preheat oven to 350 degrees. Place chicken breasts in a large glass pan (cooking in glass keeps the chicken moist). Generously cover in olive oil and then season on both sides. Bake for 35 minutes. When it comes out of the oven, I like to drizzle the oil on top of the chicken breasts.

While the chicken is cooking, make the zoodles and put on plates.

Then, when the chicken is about 10-15 minutes from being done, steam the broccoli.

When you are ready to serve the meal, drizzle the dairy-free ranch dressing on the zoodles and then lay the hot chicken breast on top. Serve with a side of the ranch dressing for dipping the broccoli.

*The best chicken breasts that I have found in the Austin area come from Smith & Smith Farms. So tender. So delicious.
