So the other night, my mom asks me, “What are we having for dinner?”
I said, “Salmon.”
She made a yuck face at me. No joke. Accompanied by a fake gagging sound. I said, “Well, you’re gonna like this fish.”
Mom sighed.
Later, when dinner time came, she took one bite and said, “Holy shit, this is
THE best salmon I’ve ever had! So good!”
Now, she requests this dish. It’s become a staple in our home – tasty brain food at its best…and it’s easy and fast.
I know that eating fish has gotten a bad rap over the years because the health of our oceans is suffering, but I still think that eating fish is better than not eating fish. The best source I know of for salmon is Vital Choice, and I must admit that if I’m not up for ordering fish online, I have been known to run into my local health food store and buy farm raised Atlantic salmon.
So far so good! All of our organs are still in tact.
Sometimes we have to set our rules and ideals aside, do what is practical and enjoy ourselves…

Salmon Fillets
What you need:
- A large cast iron skillet (or other oven safe pan)
- 2-4 small salmon fillets
- 2 TBS Olive oil
- Sea salt and pepper or other spice blend (I like Salsa & Pico from Penzeys Spices)
- Garlic herb butter
Preheat oven to 425 degrees.
Season salmon and heat olive oil in pan over medium heat. Once hot, sear salmon skin-side up for 3-5 minutes depending on thickness of fish. Flip fish and cook for another 3-5 minutes. Then, place in oven for 8-10 minutes. Top with garlic herb butter. Serve with a fresh salad or your favorite vegetables.
