Living in a model of wellness requires that you set yourself up for success. One of the ways to do this is to make sure you always have your go-to staples on hand.

Here are two of mine:

Deluxe Sockeye Salmon Burgers from Vital Choice in my freezer, and

1 head of organic cauliflower in my fridge.

This way I always know that we have SOMETHING good to eat. This meal is filled with good protein and essential fatty acids, along with all the detoxification benefits of cruciferous vegetables. It is a tasty, nutrient dense meal and the timing of it couldn’t be easier. I mean, really, after a day of juggling tasks and people and kids and lord knows what else, no one wants to come home to a complicated dinner routine. Here’s on way to make it easy on yourself:

Salmon Burgers with Tahini-Roasted Cauliflower

Let’s start with the Tahini-Roasted Cauliflower

  • 1/3 cup tahini
  • 2 TBS extra virgin olive oil
  • 1-2 tsps seasoning (I like Mt Elbert All-Purpose Seasoning from the savory spice shop).
  • 1 large cauliflower
  • Dried parsley
  • 1 lemon, juiced

Preheat oven to 475 degrees.

In a large bowl, whisk together the tahini, olive oil, and seasoning. Then, break off the florets from the cauliflower and toss into the bowl, until evenly coated. Spread onto a large, greased cookie sheet and place into oven.

Roast for 15 minutes.

Now, turn to your stove with your salmon burgers in hand and follow the instructions on the label, which basically tell you to cook in olive oil over medium heat in a large pan for 14 minutes. Flip the salmon burger at the 7-minute mark and finish cooking.

This is the exact amount of time it takes for the roasted cauliflower to get tender and amazing! (If you like, you can also use this spare time to make a side salad.)

Once the cauliflower is done, sprinkle with parsley and squeeze the lemon on top. Plate and serve.
